Fish and Spinach Pie

Thanks Geoff for setting up this blog for me, now we'll have to see how good I am at keeping it up!

Dinner tonight was Fish and Spinach Pie. Normally I make a Fish and Prawn Pie but as I was too lazy to drive to the shops just to get some prawns I decided to substitute spinach instead. Having not made this before it will definitely be a case of trial and error. Let's see how we go.

First we have the cast of characters and of course I left one out of the photo - potatoes.

  • potatoes
  • plain flour
  • boneless firm white fish - I use Ling
  • chopped spinach
  • butter or marg
  • grated tasty cheese
  • parmesan cheese
  • salt and pepper (also not pictured)
Step 1
Peel and chop and boil potatoes in salted water. When the potatoes are cooked mash and add butter and milk. Set aside.

Step 2
Make white sauce and add some grated tasty cheese. Stir constantly to avoid lumps and make sure the cheese completely melt and is incorporated into the sauce.

Step 3
Normally I mix everything in the saucepan I make the white sauce in but tonight I needed to use a big mixing bowl because of the large amount of spinach. Mix the spinach and white sauce together and then add the cubed fish. Add seasonings if wanted.

Step 4
Transfer mixture to an ovenproof dish and then cover top with the mashed potato. Sprinkle top with grated tasty cheese and grated parmesan cheese - I tend to use more than a sprinkle of the cheeses but the amount is optional.

Step 5
Bake in 180° oven until the cheeses are melted and brown on top.

The finished product.

All plated up, as you can see I added some garlic bread too.

The review
Dennis and I both enjoyed this but I felt the spinach could have done with being cooked longer. The next time I make this I will pre-cook the spinach. I will definitely make this again.

Well, there you have it - my first blog post - yaaay - go me! Hope you like it Geoff :-)
